About:

An amazing low calorie chicken recipe. Immidiate to cook and serve.

Ingredients:

8 medium pieces (about 800 grams) of chicken
2 tablespoon(s) peppercorns coarsely powdered
salt to taste
2 teaspoon(s) ginger paste
2 teaspoon(s) garlic paste
1 teaspoon(s) hot spice mix (garam masala) powder
3 tablespoons oil
2 tablespoons Sukhi Methi (Dried Fenugreek Leaves)
2 Lemons juice
4 tablespoons fresh coriander leaves finely chopped
4 Long strips slices of Onion

Directions:

1. Marinate the chicken pieces with the pepper, salt, half the ginger, garlic and garam masala powder (hot spice mix) for atleast 2 hours.

2. Heat half the oil in a heavy-bottomed pan. Shallow fry the marinated chicken on medium heat for about 4 minutes or till golden brown on both sides. Remove on to a paper towel and keep warm.

3. Add the remaining oil (or only required amount) to the pan and heat it.

4. Add the Onion. Saute briefly till the raw smell goes.

5. Add the chicken pieces, coriander leaves and the remaining garam masala powder (hot spice mix).

6. Stir in some hot water if required and mix well. Cover and cook on medium heat for about 12 minutes or till the chicken pieces are well cooked.

7. If the chicken is not yet cooked and the gravy looks dry, add some hot water little by little as required whilst stirring.

8. Put Dry Fenugreek (Methi) leaves. Cover and cook on low heat till done.

9. Serve hot garnished with coriander leaves and a sprinkling of freshly milled Pepper. Put Lemon juice to add more to its taste.

About:

This is a delicious snack to eat and serve. This can be also known as king of vegeterian snacks.

Ingredients:

1 cup kaala chana (chana should be boiled, water should be dried in chana)

1 teaspoon garlic paste

1 teaspoon ginger paste

Salt, pepper, green chilies according to taste

Half teaspoon ajinomoto (chinese salt)

2 teaspoon cornflour (for binding)

Some fresh chopped coriander

1 beaten egg for Binding (Optional, can be replaced with Bread Crumbs)

Directions:

1. Take a bowl. Mash the chanas.

2. Mix all the ingredients in the chanas.

3. Make small tikkis of the batter.

4. Take a non-stick pan. Spread some oil on it.

5. Put the tikkis on it.

6. Do up side down till golden brown.

Serve hot with mint chutney.

It is a spicy chicken dish, immidiate cooking can be eaten with noodles, rice or chapatis.

Ingredients:

Boneless chicken cut into small cubes (1 whole chicken)

1 tablespoon tomato sauce

1 tablespoon chili sauce

2 tablespoons soya sauce

2 tablespoons vinegar

Salt to taste

6 green chilies

4 big onions cutted in long strips

1 heaped tablespoon corn flour

2 eggs

1 teaspoon Ajinomoto (chinese salt)

Refined cooking oil

1 tablespoon garlic paste

1 teaspoon ginger paste

2 capsicum cutted in long strips

Directions:

1. Wash the chicken pieces and dry them.

2. Marinate the pieces with 1 tablespoon soya sauce, 1 tablespoon vinegar, 1/2 tablespoon tomato sauce, 1/2 table spoon chilli sauce and enough salt, Ginger and garlic paste

3. Beat the eggs and pour them on the chicken pieces.

4. Add half a tablespoon corn flour and mix well the whole mixture. Allow it to stand for 2 hours.

5. Drain excess liquid and store in a container. Heat oil in a pan and fry the chicken pieces.

6. Keep the fried pieces in a separate container. In the left over oil fry the green chilies and chopped onion , capsicum    slightly.

7. Pour the excess liquid stored earlier. Stir continuously. Add the chicken pieces. Pour the rest of the sauces and a pinch of salt.

8. Mix the 1/2 tablespoon corn flour with a little of water and pour in the pan. Add the ajinamoto. Stir well and serve hot.

Tip – If you want to eat less oil, Do not fry the chicken, boil the chicken and put in the sauces prepare the dish with rest over the ingredients

Vegetable Bread Cake with Chicken

About:

It is a recipe of layered cake, very delicious to eat.

It is not easily available in the market. It is a homemade recipe.

Ingredients:

16 Slices of bread

Ingredients for chicken layer recipe

Boil half k.g. boneless chicken. Shred into small pieces

2 onions finely chopped

2 green chilies finely chopped

Salt and pepper according to taste

A pinch of ajinomoto

1 teaspoon oil

Directions:

Take a pan put oil, put onions till transparent . Put chilies, shredded chicken, salt, pepper, ajinomoto, stir it.

Chicken recipe is done.

 

Ingredients for potato layer recipe:

3 potatotes (boiled, peeled and chopped and mashed)

2 green chillies (finely chopped)

1 tbsp coriander leaves (finely chopped)

Juice of 1/2 lemon

1 tsp cumin seeds

Salt to taste

2 tbsp oil

 

Directions:

1. Heat oil and saute cumin seeds.

2. Now add mashed potatoes and chillies to it.

3. Stir and fry for about 5 minutes.

4. Add lemon juice, salt and coriander. Mix well.

5. Garnish with chopped coriander leaves.

Potato recipe is done.

 

Ingredients for green peas layer:

Tablespoons butter

1/2 cup nonfat dry milk

2 tablespoons flour

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup warm water

1cup boiled peas

Directions:

1. Melt butter in heavy saucepan.

2. Remove from heat. Add non-fat dry milk, flour, salt, and pepper.

3. Stir until well mixed. Gradually add warm water. Stir until smooth.

4. Cook until thick, stirring constantly. Add boiled peas.
 
5. Green peas recipe is done.

Now the recipes are ready.

 

How to prepare bread cake……

1. Take a round medium size steel vessel. Greese it properly.

2. Join 4 breads in the vessel.

3. Spread chicken recipe layer on it.

4. Again join 4 breads on it. Spread potato recipe layer on it.

5. Again join 4 breads on it. Spread peas recipe layer on it.

6. Again join 4 breads on it. Cut the thinly sliced tomatoes on it.

7. Put some grated cheese on it. Cover the vessel with a lid.

8. Steam it in a steamer or ina big container putting some water in it. Steam it for 2 minutes.

9. Take out the vessel. Put the vessel up side down on a plate.

10. Take out the layered cake on a plate.

Serve hot. (can be served in the breakfast or brunch)

This is a very popular vegetarian dish of North India including Punjab and Jammu.

It is an excellent source of proteins for the vegetarians. This is a north Indian vegetarian meal which can be savored on any moody afternoon. This dish is so delicious to eat. This dish is a combination of Rajma and Chawal. By having this dish, you will enjoy the afternoon, which will make you feel that you have eaten something special, tasty today. Some people feel sleepy by eating this and some and in some people it brings back lost energy and wakes your senses up. It depends upon person to person. If you eat this dish the next day, it will be tastier. You can use tinned red kidney beans which can make faster the process of Rajma. There is little bit difference of taste as in tinned red kidney beans, there are preservatives added but it can work for a quick meal.

Ingredients:

1 cup Rajma/red kidney beans (soaked overnight/8 hours)

½ cup finely minced onions

1 teaspoon minced ginger

1 teaspoon minced garlic

1 cup tomatoes puree

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon garam masala powder

1 tablespoon butter

2 tablespoons chopped coriander leaves

1 teaspoon vegetable/sunflower oil

Salt to taste

Directions:

1. Put Rajma in a pressure cooker put the soaked remaining water (water should be atleast 4 cups) give 3-4 whistles cook till Rajma are tender.

2. Heat oil to a sauce pan, add minced ginger, garlic and onions. Sauté until onions are soft and golden brown.

3. Add chopped tomatoes, turmeric powder, cumin powder, garam masala powder and sauté until tomatoes become soft.

4. Add the cooked Rajma, salt, 1 cup water and butter and simmer for 30 minutes. The longer you simmer the more the spices get into the Rajma and the tastier it gets. You can alter the consistency of the gravy by adding more water.

5. Garnish with coriander leaves .

 
Ingredients for Chawal (Rice):

3 cup rice (soaked in water for ten minutes

1 teaspoon. Cumin seeds

1 teaspoon. Salt

1 teaspoon oil 

3-4 bay leaves

1. Take a cooker. Put oil and Cumin seeds

2. Stir it till it is golden brown

3. Add 5cup water, put drained rice, salt and bay leaves. Give one whistle to it . Open the cooker see the rice are properly cooked.

Serve hot Rajma and Chawal.

Ingredients:

 

1 medium size chicken (cut into pieces properly)

2 cup fresh hung curd

Salt, pepper, green chilies according to taste

Half cup fresh cream

1 tsp. Cumin powder

1 tsp. Coriander powder

A pinch of red color

 

Directions:

 

Marinate all the ingredients in the chicken , keep the marinated chicken for half an hour aside. Take a pan , put the marinated chicken in the pan. Cover it with a lid till it tenders. Decorate it with fresh green coriander leaves.

 

It is ready to serve hot…….

Ingredients:

Half Kg. Keralas

Directions:

 

To stuff keralas-

Salt and Red chilies powder according to taste

1tb. sp. Saunf powder(fennel seeds)

1tb.sp. Jeera powder (cumin seeds)

1tb. sp.Dhania powder(Coriander powder)

Amchoor according to taste

How to cook stuff keralas:

1. Take a pan, put some oil.

2. Put keralas in it.

3. Cover it with a lid.

4. Cook it till they are tender.

5. Remove the lid. Cook them till they are slightly brown.

6. Put the Imli chutney on karelas.

                                                                     

Khatta Mettha Keralas are ready to serve.

About:

Paneer Pakora are slices of Cottage Cheese fried in oil, Paneer (Cheese) being wrapped with Chickpea Flour. Very tasty evening snack.
Ingredients- 

Paneer (Cottage Cheese) according to the quantity you want
Cut the paneer pieces into cubes

For the batter-

1 cup besan (ChickPea Flour)
Salt according to taste
Red chili powder according to taste
1 tsp. baking powder
Make a thick paste
A pinch of red food colour
Keep the batter for half an hour aside, to settle down

Put oil to fry the pakoras
Dip the paneer in the batter
Fry the paneer twisely
Take out the pakora on a paper napkin
Sprinkle chat masala on it

3. Put cumin seeds, stir it till it is light brown.

4. Put chopped onion, stir it , put turmeric powder , red chilli  powder and salt according to taste, stir it

5. Put chopped carrot and peas, stir it , till it leaves oil

6. Put 1 cup water, stir it.

7. Cover it till it becomes tender or give a whistle in cooker.

It is ready to serve.
